What is white tea?

Chinese white tea is a class of chinese teas that are lightly fermented, but almost un-processed otherwise. They are made by a relatively simple, but highly skilful tea making process and are among the least processed Chinese teas. They have very high level of natural anti-oxidants and low in caffeine content.
White teas’ flavors are light, gently sweet and refreshing.
White teas have many health benefits, with aged white tea known to be used as anti-inflammatory medication such as measle infection in China before the era of modern medicine.
Fuding white teas are known as: the first year teas, the third year medicine and the fifth year treasure.
